ingredients
3 eggs (can remove a yolk if you want to lower the cholesterol)
1/4 cup of cottage cheese (drained to remove some of the moisture)

Break eggs, mix shell contents with cottage cheese, cook over medium heat in a nonstick pan until to the desired consistency. Add salt and pepper if desired (but remember that cottage cheese has some salt)
