I found the recipe on Pinterest, thought I'd give it a try. I didn't have pears on hand, so I just used apples. It was better served warm. Definitely a great fall recipe!
ingredients
- 1/2 cup (120g) butter
- 1 cup Sugar (Thermomix 220g raw sugar)
- 2 eggs
- 1 cup (150g) plain flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 Granny Smith apple, peeled and cored
- 1 pear, peeled and cored extra
- 1/3 cup sugar (Thermomix 50g raw sugar)
- 1 tsp cinnamon
- 1 tsp grated lemon zest
directions
- Preheat oven to 350 (180 C). Grease and line a 22 cm spring-form tin.
- Beat butter, sugar and eggs until light and fluffy.
- Add flour, baking powder and vanilla. Mix well.
- Spread batter into base of tin.
- Slice fruit thinly and combine with extra sugar, cinnamon and lemon zest.
- Arrange fruit on top of cake batter.
- Bake for about 1 hour or until done when tested.
- Leave in tin for 5 minutes and then leave to cool on wire rack.
- Serve with whipped cream, why not try adding 1 tsp cinnamon with the cream!
