I found the recipe on Pinterest, thought I'd give it a try. I didn't have pears on hand, so I just used apples. It was better served warm. Definitely a great fall recipe!

ingredients

  • 1/2 cup (120g) butter
  • 1 cup Sugar (Thermomix 220g raw sugar)
  • 2 eggs
  • 1 cup (150g) plain flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 Granny Smith apple, peeled and cored
  • 1 pear, peeled and cored extra
  • 1/3 cup sugar (Thermomix 50g raw sugar)
  • 1 tsp cinnamon
  • 1 tsp grated lemon zest

directions

  •  Preheat oven to 350 (180 C). Grease and line a 22 cm spring-form tin.
  •  Beat butter, sugar and eggs until light and fluffy.
  •  Add flour, baking powder and vanilla. Mix well.
  •  Spread batter into base of tin.
  •  Slice fruit thinly and combine with extra sugar, cinnamon and lemon zest.
  •  Arrange fruit on top of cake batter.
  •  Bake for about 1 hour or until done when tested.
  •  Leave in tin for 5 minutes and then leave to cool on wire rack.
  •  Serve with whipped cream, why not try adding 1 tsp cinnamon with the cream!
