Festive Christmas sugar cookie

ingredients

1 cup (2 sticks) unsalted butter, softened
1 2/3 cups granulated sugar
2 eggs, room temperature
2 teaspoons vanilla
3 1/3 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
Food coloring, red or green
Colored sugars

directions

1. Beat together butter and sugar until light and fluffy. Add eggs and vanilla; beat well. On low speed, beat in flour, baking powder and salt.
2. Divide dough in half. Tint one portion.
3. Roll each half between 2 sheets of waxed paper into an 11 X 15 rectangle. Stack plain dough on top of tinted dough. Roll jelly roll style forming a 15" log. Roll log in colored sugar.
4. Wrap log in plastic wrap and chill at least 4 hours.
5. Preheat oven to 350 degrees. Unwrap log and slice into 1/4" thick rounds. Arrange on ungreased (or parchment paper lined) cookie sheet. Bake about 11-13 minutes until lightly browned.
6. Remove immediately from cookie sheets and cool on wire rack.
TIP: When rolling log, try to form as round as possible to create symmetrical pinwheels when sliced. Dough must be well chilled before slicing.
I make two batches-one red and one green.
