It’s important to not overcook Brussels sprouts. They will lose their nutrients and start to develop a less than pleasant aroma.

ingredients

  • 1 lb fresh Brussels sprouts, cleaned and quartered
  • 1 tbsp olive oil
  • ½ tsp kosher salt
  • ¼ tsp ground black pepper
  • 4 slices bacon, diced
  • ¼ cup blue cheese, crumbled

directions

  1. Heat oven to 400 degrees.
  2. Place quartered brussels sprouts on a baking sheet. Sprinkle with salt and pepper. Drizzle olive oil over brussels sprouts, toss to coat.
  3. Spread bacon on one side of the pan.
  4. Roast sprouts for 3-5 minutes, or until bacon is crisp.
  5. Place roasted sprouts and bacon in a large serving bowl. Sprinkle in blue cheese and gently stir to combine
  6. Then Serve!
