ingredients

1 cup cornmeal
2 cups flour
1 1/2 cup sugar
1 T. baking powder
1/2 tsp. salt
3/4 cup butter, melted
1 cup evaporated milk
1 tsp. vanilla
4 large eggs (white and yolks separated)
1/4 cup butter (optional)

directions

Preheat oven to 350 degrees. Grease and flour a 9x13 inch pan.

Separate the eggs, putting the whites in a small bowl and the yolks in a medium bowl.

Combine cornmeal, flour, sugar, baking powder & salt in a large bowl. Set aside.

Add milk, vanilla and melted butter to the medium bowl with the yolks. Stir.

Pour the liquid mixture in to the dry mixture.

Beat egg whites in a separate bowl until stiff.

Fold stiff egg whites into batter. Pour into the greased pan.

Bake for 30 minutes (or until tests done with toothpick)

Optional (but very good): While hot, melt 1/4 cup (1/2 stick) butter over the top.

It's really good made some tonight the sugar just a lil too much next time I would use 1cup instead off cup and half
