Mac and cheese stuffed peppers

Vegetarian entree

ingredients

  • 4 medium-sized peppers (poblano recommended)
  • Olive oil
  • 1 box mac and cheese, prepared according to directions
  • Shredded cheese

directions

  1. Preheat broiler to 450 degrees.
  2. Lightly brush peppers with olive oil.
  3. Roast on baking sheet for ten minutes or until skin begins to char and blister, turning several times.
  4. Remove peppers from oven and immediately seal in ziploc or place in bowl covered with plastic wrap.
  5. Leave to steam for ten minutes, then remove charred skin.
  6. Switch oven to bake at 350 degrees.
  7. Cut peppers in half and stuff with macaroni.
  8. Cover with shredded cheese and return to oven for five minutes or until fully melted.
