description

these are cookies that an old friend of the family use to make for me every year growing up, over 40 years ago, I now have the recipe to make them myself.

ingredients

  • 5 cups all-purpose flour
  • 2 teaspoon baking soda
  • 2 teaspoon baking powder
  • 2 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon salt
  • 3 cups granulated sugar
  • 1 cup butter (2 stick), softened
  • 2 cup LIBBY'S® 100% Pure Pumpkin
  • 2 large egg
  • 2 teaspoon vanilla extract
  • Glaze Colored sprinkles, if desired

 

FOR GLAZE: COMBINE 4 cups sifted powdered sugar, 6 tablespoons milk, 2 tablespoon melted butter and 2 teaspoon vanilla extract in small bowl until smooth.

  • PREHEAT oven to 350° F.
  • Grease baking sheets. (I prefer to use parchment paper or liner)
  • COMBINE flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl.
  • Beat sugar and butter in large mixer bowl until well blended.
  • Beat in pumpkin, egg and vanilla extract until smooth.
  • Gradually beat in flour mixture.
  • Drop by rounded tablespoon onto prepared baking sheets.
  • BAKE for 15 to 18 minutes or until edges are firm.
  • Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
  • Drizzle Glaze over cookies and add colored sprinkles, if desired.
  • Recipe makes approx 6 dozen of cookies can cut recipe in half if you would like less, depends of the size that you make.
  • Can use tablespoon or teaspoon to drop them, according to your preference.
  • If use you tablespoon about 6 dozen if you use teaspoon about 12 dozen.
