ingredients
- 4 sweet bell peppers
- 2 tsp. olive oil
- 1/2 medium yellow onion, chopped
- 3 1/2 cups shredded cooked chicken breast (2-3 large bone-in chicken breasts will produce 3 1/2 cups of shredded chicken)
- 2 cups marinara sauce (or your favorite traditional pasta sauce - Homemade recipe HERE if you need one)
- 8 slices mozzarella cheese
- 1 cup Italian seasoned Panko breadcrumbs
- 1/2 cup Parmesan cheese
directions
- Preheat oven to 400 degrees.
- Cut peppers in half (through the stem). Remove the stem and seeds of the pepper. Place the peppers (hollow side up) in a 13x9" baking dish.
- In a large sauté pan over medium-high heat, add the oil and onion and cook about 5 minutes, stirring occasionally. Stir in the shredded chicken and marinara sauce. Remove from heat.
- Push one slice of mozzarella cheese down into each pepper half.
- Spoon the chicken mixture on top of the mozzarella, dividing the chicken mixture among all the peppers.
- Top each stuffed pepper with 2 tbsp. breadcrumbs and 1 tbsp. Parmesan cheese.
- Bake covered for 20 minutes, then uncovered for 20 minutes more.
