Chicken Parmesan Peppers

ingredients

  • 4 sweet bell peppers
  • 2 tsp. olive oil
  • 1/2 medium yellow onion, chopped
  • 3 1/2 cups shredded cooked chicken breast (2-3 large bone-in chicken breasts will produce 3 1/2 cups of shredded chicken)
  • 2 cups marinara sauce (or your favorite traditional pasta sauce - Homemade recipe HERE if you need one)
  • 8 slices mozzarella cheese
  • 1 cup Italian seasoned Panko breadcrumbs
  • 1/2 cup Parmesan cheese

directions

  1. Preheat oven to 400 degrees.
  2. Cut peppers in half (through the stem). Remove the stem and seeds of the pepper. Place the peppers (hollow side up) in a 13x9" baking dish.
  3. In a large sauté pan over medium-high heat, add the oil and onion and cook about 5 minutes, stirring occasionally. Stir in the shredded chicken and marinara sauce. Remove from heat.
  4. Push one slice of mozzarella cheese down into each pepper half.
  5. Spoon the chicken mixture on top of the mozzarella, dividing the chicken mixture among all the peppers.
  6. Top each stuffed pepper with 2 tbsp. breadcrumbs and 1 tbsp. Parmesan cheese.
  7. Bake covered for 20 minutes, then uncovered for 20 minutes more.
