ingredients
- 1/2 lb ground sausage, any flavor works (can use ground beef)
- 1 pkg taco seasoning mix
- 2 c beef broth 1 1/2 c small pasta (wagon wheel or small shells)
- 1 can corn, drained (15.25 oz)
- 1 can cannellini beans, rinsed and drained (15 oz)
- 1 can diced tomatoes with green chilies (10 oz)
- 1/2 c black olives, chopped or sliced
- 1/2 c sour cream
- 1 c shredded cheddar cheese
OPTIONAL TOPPINGS
- sour cream
- chopped tomatoes
- avocado
- shredded cheese
- lettuce
- chopped or sliced black olives
directions
- Cook sausage until done in a large deep skillet. Taco seasoning, beef broth, pasta, corn, beans, olives, and tomatoes in skillet.
- Add taco seasoning, beef broth, pasta, corn, beans, olives, and tomatoes, stir well to combine. Bring to a boil. Lid placed on the skillet.
- Reduce heat to medium-low, cover, and cook for 10 minutes. Stirring ingredients together.
- Remove from heat. Stir well. Stirring in sour cream.
- Stir in sour cream. Cheese sprinkled on top.
- Top with cheese. Let stand 10 minutes. Pasta should soak up any leftover liquid in this time. Serve with any additional toppings of your choosing. Skies the limit!
