Mini German Pancakes

Ingredients Related Tips

1 cup milk
6 eggs
1 cup flour
1/2 tsp. salt
1 tsp. vanilla
1/4 cup butter, melted

Directions

 

  • Preheat oven to 400 degrees F. Blend first five ingredients (milk thru vanilla) in a blender.  Be careful to see that any flour clumps get well-blended.
  • Blend in butter a little at a time in order to temper the eggs.
  • Grease muffin tins well and distribute batter evenly between 24 tins  Bake for 15 minutes, or until puffy and golden on top.

They need more details in the recipe.Is batter supposed to be runny or thick batter?But they just expect you have your own strawberry jam whatever, but most people don't.

Very egg-y. Would recommend more vanilla, less eggs. Maybe 4 or 5. And yes- they rise and make that shape on their own if you fill the pan about halfway.

If you are making the big german pancake, need to heat pan and then put some melted butter in bottom of each muffin tins. I would estimate using 1/2 tablespoon per tin. This allows little dutch babies rise more easily.

So I was hesitant about the rising power of these pancakes, but tried it out and they actually rose into nice bowl shaped pancakes. You have to watch them though because rise quick!

For those wondering how it ends up in the cup shape- turns out batter will naturally rise that way! It definitely be round with a hollow for fillings. PB&J is great filling!
