Instead of the chips
ingredients
1 teaspoon vegetable oil
2 cloves garlic, minced
6 green onions, sliced, white parts and green parts separated
1 1/2 cups shredded cooked chicken
1 teaspoon chili powder
1 cup salsa
salt and pepper to taste
1 pound bell peppers (I like the mini peppers - usually sold by the bag in the produce section near the full-sized bell peppers)
1 1/2 cups shredded cheese blend (can be low-fat)
1/4 cup sliced black olives
1/2 large tomato, diced
1/4 cup cilantro
directions
Heat oven to 350 degrees.
Cut the ends off the peppers, then slice lengthwise into whatever size you like. And flatten them out.
Mix up the Chicken, Garlic, Green Onions, and Chili Powder in the skillet over medium heat. Remove from the heat and stir in some Salsa. Spoon into the peppers and top with cheese. Then Bake for 10 minutes at 350. Til the cheese melts, Then top them with whatever veggies you like.
