A hearty vegetable beef soup
ingredients
Lb stew meat, 3 qts H2O, 1lg onion, 1potato,1sweet potato,2carrots,1parsnip,sm turnip,1 1/2 C. canned tomatoes, cut up juice reserved, 1 sm cabbage,2stalks celery,2Ccut gr. Beans,3/4 C raw barley. Chopped fresh parsley, Salt&pepper to taste
directions
In large kettle brown beef. Add 1 onion and 1 bay leaf. Add barley to browner beef and a little water. Cover and cook for 10-15 mins. Add other vegies chopped and tomatoes. Add rest of water and juice from tomatoes. Cover and cook until vegies are tender. A low simmer will assure that your meat will be tender. You can add or leave out your choice of veggies. You nay also add dumplings. Use recipe found on Bisquik box.
