1 medium onion
2 carrots
3 stalks of celery
1 tsp. butter
1/2 tsp. garlic powder
4 cups chicken stock
2 bay leaves
1 cup diced cooked chicken
8 oz. can diced tomatoes
8 oz. corn (can or frozen)
8 oz. green beans (can or frozen)
frozen dumplings (Reese's)
egg noodles
1 cup cooked rice
directions
Brown diced onions, carrots and celery in tsp. butter until translucent. Add diced chicken and approx. 4 cups chicken stock. Add 2 bay leaves and garlic powder.Simmer for 1 hour.
Remove bay leaves. Add corn, green beans and diced tomatoes. Add 1/2 cup frozen peas.
Add boiled dumplings or 1 cup cooked rice. Heat thoroughly. Salt and pepper to taste and add more water or stock. Also great with diced turkey instead of chicken
