Easy Bruschetta Grilled Cheese

ingredients

1 lb cherry tomatoes
5-10 basil leaves
2 tbsp. olive oil, divided
1/2 small onion, diced
2 garlic cloves, minced
Salt and pepper
4 slices of bread
1/3 cup balsamic vinegar
2 oz crumbled cheese (goat, feta, whatever)
2 oz cheddar cheese, grated

serving 2 FULL sandwiches, but they're also great to cut into finger foods :)

directions

1) Preheat the oven to 400F. Spread the cherry tomatoes onto a baking sheet and pour 1 tbsp. of olive oil over top. Season with some salt and pepper and toss to combine. Roast for 20-25 minutes or until slightly caramelized.


2) While the tomatoes are roasting, heat the balsamic vinegar in a small saucepan. Simmer until the vinegar has reduced to a glaze.


3) Pour the roasted tomatoes into a bowl. Add the onion, garlic, basil, and remaining 1 tbsp. olive oil. Toss to combine and season with salt and pepper if necessary.


4) Heat a frying pan over medium-low. Butter one side of each slice of bread. Spread the goat cheese onto two pieces of bread and layer the tomato mixture on top of each. Finish with a sprinkling of cheddar cheese and the remaining slices of bread. Fry the sandwiches until the bread is golden brown and flip, repeating until the other side is golden.


5) Slice the sandwiches and finish with a drizzle of balsamic glaze.
