A delicious chicken salad, great for sandwiches and on crackers
ingredients
lg. can of chicken breast
1/4 c. chopped celery
1/4 c. chopped almonds (toasted are great)
1 egg (with or without yolk)
1/4 c. mayo (reg. or fat-free)
salt and pepper to taste
directions
Boil egg and chop. Mix all ingredients in a bowl. Chill. (To toast almonds, brush lightly with olive oil and broil about 5 minutes.)
