Haters gonna hate... but not this :)
ingredients
1/2 Tablespoon butter
3 1/2 cups Zucchini (grated)
2 eggs, beaten
1/2 teaspoon of salt
1 teaspoon black pepper
2 Tablespoons Cornmeal
3 Tablespoons Bread Crumbs
4 Tablespoons Grated Parmesan Cheese
directions
Preheat the oven to 375 degrees F (190C)
Grease Baking pan with butter
Squeeze the grated zucchini with your hands to get rid of all the excess water
Add the beaten eggs, 1 tablespoon Parmesan Cheese, salt and pepper. Combine well.
Pour this mixture into the pan and spread around evenly.
Sprinkle the Cornmeal, Bread Crumbs, and rest of the Parmesan cheese on top.
Cover with foil and bake for 30 minutes until puffed up.
Then UN-Cover and bake for another 15 minutes until the top is crispy.
Serve
- you can use 5 tablespoons of cornmeal and NO breadcrumbs if you're trying to go Gluten Free :)
