a hearty side that has a ton of different combinations

ingredients

1 cup uncooked brown rice
spinach
beans (of any kind - if canned, make sure to drain and rinse)
tomatoes
1/2 an onion, chopped
olive oil

directions

Cook rice to package directions. During the last 10-15 minutes of cooking, heat 2 T olive oil in a large skillet and saute spinach, tomatoes, and onions. When the rice is cooked, add beans and spinach mixture and heat through. Season with salt and pepper to taste. Serve.

(note - I make this a lot, and change it almost every time. You can use virtually any veggie, canned or frozen. I use whatever beans I have on hand, and if I don't have fresh tomatoes, I used canned diced.)
