More Stuffed Peppers

I'm Really Loving These!

ingredients

1 C long-grain brown rice (any long-grain rice will work.)
4 large green bell peppers, bottom trimmed, cap end cut off and diced, and seeds removed
1 large onion, diced
2 tsp. + 1 tsp. olive oil
2 links (about 8 oz.) turkey Sweet Italian Sausage (or other sausage of your choice. Use diced mushrooms instead of sausage for vegetarian version.)
1/2 tsp. ground fennel
1/2 tsp. dried Greek or Turkish oregano
1/2 cup grated Parmesan cheese
salt and fresh ground black pepper to taste
1/4 cup grated mozzarella cheese

directions

  1. Cook Rice however you like
  2. Preheat oven to 375 degrees.
  3. Trim the bottom of the Peppers so they're flat.  They'll stand up easier
  4. Hollow out the Peppers (dice any extra pepper and set aside)
  5. Place peppers on a greased baking sheet or muffin tin if they'll fit
  6. In a skillet add 2 tsp Olive oil and saute the diced peppers and onions for 3 minutes, set aside
  7. Add the Sausage to the pan and cook until browned
  8. Add back the onions and peppers, with the Oregano and cook for a few minutes
  9. Add Cooked rice and Parmesan Cheese, cook for another 2 minutes
  10. Stuff that mix into the Peppers, press in until it's tightly packed
  11. Bake for 30 minutes
  12. Remove and top with shredded cheese and put them back in the oven for another 12 minutes
  13. Serve!
