More Cheesy Stuffed Biscuits

ingredients

  • 1 Container Flaky Layers Biscuits (8 biscuits)
  • 16 Fresh Mozzarella Balls - marinated in oil and herbs
    • Make your own marinade ingredients 
    • 3/4 cup good-quality olive oil
    • 5-6 garlic cloves, thinly sliced
    • 2 tablespoons chopped fresh herbs (i.e. basil, thyme, oregano, and/or parsley)
    • 1-2  bay leaves
    • Peel from half a lemon, thinly sliced
    • Splash of sherry, red wine, or balsamic vinegar
    • Red pepper flakes, to taste
    • Kosher salt, to taste

directions

  1. Preheat oven to 350°F
  2. Gently flatten and stretch each biscuit to approximately twice it's size.
  3. Place 2 mozzarella balls in the center of each biscuit. Be careful not to get oil on the outer edges or biscuits will not seal completely.
  4. Quickly bring all sides together and pinch to close.
  5. Place seam side down on baking sheet.
  6. Bake 14-15 minutes or until golden brown.
  7. Brush hot biscuits with oil and herbs from marinated mozzarella.
  8. Let cool 2-3 minutes before serving.

For the marinade:

  1. Heat olive oil and garlic in a small sauce pan over medium low heat until bubbling gently. Remove from heat and allow to cool for a few minutes.
  2. Stir in herbs, lemon slices, and bay leaf. Add vinegar, red pepper flakes, and salt to taste. Pour the mixture over the cheese (or whatever else you want to marinate) and transfer to an airtight container.
  3. Refrigerate and allow to marinate overnight or up to two weeks.
  4. Bring to room temperature before serving.
