Cheesy Potato Pancakes

Great use for the leftover mashed!

ingredients

  • 3 cups mashed potatoes, chilled or at room temperature
  • 1/2 cup shredded cheddar cheese
  • 2 medium scallions, very finely chopped
  • 2 medium garlic cloves, minced or pressed
  • 1 egg, lightly beaten
  • 1/3 cup all-purpose flour
  • 2 tablespoons olive oil
  • Salt, to taste

Gravy I used HERE! 

directions

  1. Mix together all ingredients but oil and salt in a large mixing bowl and set aside.
  2. Warm oil in a large frying pan over medium heat.
  3. Drop 3-inch mounds of potatoes onto skillet and gently press down to flatten. Cook on each side for 4 to 5 minutes until crisp and golden brown. Transfer to a paper towel lined baking sheet to drain. Season with salt and pepper to taste.
