Deep Dish Pizza...Cast Iron Style

ingredients

Homemade Pizza Sauce:

  • 2 tsp. olive oil
  • 1 Tbsp. butter
  • 4 garlic cloves {minced}
  • 1 3/4 tsp. onion powder
  • 1/4 to 1/2 tsp. red pepper flakes
  • 3/4 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1 can tomato sauce
  • 4 Tbsp. tomato paste
  • 2 tsp. brown sugar
  • 2/3 cup warm water
  • 5 TBSP. Parmesan cheese {grated}

Homemade Pizza Dough:

  • 1 1/3 c. water(warm)
  • 2 1/4 tsp.yeast
  • 3 1/2 c. flour
  • 1 tbsp. salt
  • 1 tsp. sugar
  • 2 tbsp. oil

Pizza Toppings of your choice (I used the following)

  • 6 ounce cooked hamburger,
  • 4 ounce pre-cooked bacon pieces,
  • 4 ounce pepperoni,
  • 1 green peppers,
  • 1 cup mushrooms
  • 1 onion
  • 1 1/2 cups shredded mozzarella
  • 1/2 cup fresh Parmesan petals

directions

Sauce:

  • In a large pot on medium heat oil and butter
  • Saute minced garlic for a few minutes
  • Quickly add onion powder, red pepper flakes and oregano
  • Stir a few times then add tomato sauce, tomato paste, brown sugar, Parmesan cheese and water
  • Simmer on low heat for 1 to 2 hours . 

Dough: 

  • Add your dry yeast to the warm water & let proof for about 10 mins.
  • Add your dry ingredients to a mixer bowl
  • Mix to combine and slowly add your oil and yeast mixture that has been proofed.
  • Mix on med. speed to combine, then on low speed for about 10 minutes until a ball forms
  • Put your dough balls (divide into 2) in an oiled bowl,
  • Lightly brush oil all over the ball cover in saran wrap & put in a warm place until doubled in size About 2 hours. 

Pizza:

  • Make up your pizza sauce ahead of time.
  • Make your dough recipe allowing time for rising.
  • Grease a cast iron pan with shortening or oil.
  • Put your pizza dough into the pan and lightly press it to fit the bottom and up the sides of the skillet.
  • Let rest a few minutes and finish spreading as the dough is very elastic.
  • Assemble your toppings, by making your pizza upside down.
  • By this i mean add about half of your cheeses first, then your veggies, then the meats, then add your sauce over the top and the rest of your cheese on top.
  • This will help prevent it from getting soggy on the bottom and the sauce will go through all the toppings as well.
  • Bake in a preheated oven on 425 for about 25-30 mins.or until the crust is golden brown.
  • Let rest 10 mins. before cutting and serving.
