Penne Pasta with Chorizo Sausage

description

ingredients

  • 4 cups uncooked penne pasta
  • 1 large pot of water salted to season pasta (tbsp)
  • 1 jar Classico  Tomato Alfredo sauce
  • 3-4 fresh mushrooms
  • 1 red pepper
  • 1 Chorizo sausage  sliced up
  • 1/2 onion chopped
  • 1/4 cup Parmesan or Asiago cheese (opt)
  • a few sprigs of chopped fresh basil
  • 2 tbs olive oil  

directions

  • As you are heating your salted water to boil
  • In a large fry pan (deep edges) or pot, add olive oil to pan (approx 2 tbs)
  • Slice and add mushrooms, saute till soft (3 mins)
  • Add onions, sliced red peppers, sliced chorizo sausage and chopped fresh basil
  • Save some chopped basil for garnish
  • Cook for a few more mins till peppers are hot through
  • Add the jar of Alfredo sauce
  • Simmer on low
  • When your water has come to a boil, cook your pasta according to package directions
  • Drain
  • Replace back in pot, add your sauce, stir together
  • Serve with remaining grated Asiago cheese and fresh basil
