Vegetarian Fried Noodles with vegetables
ingredients
Angel Hair Pasta/Thin Spaghetti
Frozen Spinach
Onions
Red Bell Pepper
Vegetable Oil
Thyme
Curry Powder
Minced Garlic
Salt (Optional)
directions
Cook pasta al dente according to instructions and while it is cooking but a tbsp of vegetable oil in a skillet. Add garlic, spinach and chopped onion and bell pepper and salt and saute until onions are slightly soft/translucent and put aside,
Drain pasta immediately when done. Add about 4 tbsp of oil to the skillet and add pasta, and 'fry' on medium high heat until they start to take on a slight golden hue. Reduce heat, and add vegetables, thyme,and curry powder, and fold together. Add more salt if desired.
