Easy, Simple, Low Carb, and Low Fat!

ingredients

  • 1 pork tenderloin fillet
  • oregano
  • salt & black pepper
  • olive oil



directions

  • Preheat a grill pan or a barbecue grill to a medium-high heat.
  • Trim the tenderloin of any excess fat. Cut the fillet into 2.5 cm thick slices (about 1 inch).
  • Press the medallions with your hand to flatten them slightly.
  • Brush both sides of the medallions with olive oil and season each with oregano, black pepper and salt.
  • Place the medallions on the grill and cook each side, turning just once until it's cooked to your liking (see notes below for timings).
  • Put them in a plate and cover in foil. Leave them for a few minutes to rest before you eat them, this will make them really juicy and tender.

Cooking times: Rare - 1-2 minutes each side; Medium - 2-3 minutes each side; Well done - 3-4 minutes each side.
