ingredients
- 5-6 thin boneless chicken breast
- 1 sleeve ritz crackers, crushed
- 2 eggs, beaten
- 1 C. flour
- house seasoning (equal parts garlic powder, onion powder and black pepper)
- vegetable oil for frying
directions
- Place the chicken in a bowl and toss in about 1 T. house seasoning and coat the chicken well.
- Heat about 1" of oil in a skillet over medium high heat.
- Take each breast and dredge in the flour, then into the eggs and then in the crackers.
- Place in the oil and repeat with remaining chicken.
- Fry for 4-5 minutes (if your chicken is less than 1/2" thick) on each side. If your chicken is thicker than 1/2" you will need to fry a bit longer.
- Remove to a paper sack or paper towel lined pan.
- Let rest for a couple of minutes before serving.
