It's literal and funny at the same time!

ingredients

  • 5-6 thin boneless chicken breast
  • 1 sleeve ritz crackers, crushed
  • 2 eggs, beaten
  • 1 C. flour
  • house seasoning (equal parts garlic powder, onion powder and black pepper)
  • vegetable oil for frying

directions

  1. Place the chicken in a bowl and toss in about 1 T. house seasoning and coat the chicken well.
  2. Heat about 1" of oil in a skillet over medium high heat.
  3. Take each breast and dredge in the flour, then into the eggs and then in the crackers.
  4. Place in the oil and repeat with remaining chicken.
  5. Fry for 4-5 minutes (if your chicken is less than 1/2" thick) on each side. If your chicken is thicker than 1/2" you will need to fry a bit longer.
  6. Remove to a paper sack or paper towel lined pan.
  7. Let rest for a couple of minutes before serving.
