ingredients
- 1 pastry shell
- 2 cups mashed cooked sweet potatoes, or one 17.2 oz can sweet potatoes, drained or mashed
-1/2 cup sugar
-1/2 tsp ground cinnamon
-1/4 tsp allspice
-1/4 tsp nutmeg
-1/8 tsp salt
-3 eggs, lightly beaten
-1 cup buttermilk or dairy sour cream
directions
1. set baked pastry shell aside. Preheat oven to 375 degrees. For filling, in a large bowl stir tegether sweet potatoes, sugar, cinnamon, allspice, nutmeg, and salt. add eggs; beat lightly with a fork just until combined. Gradually stir in buttermilk until thoroughly combined.
2. place pastry shell on the oven rack. Carefully pour filling into pastry shell. Bake for 35 to 40 minutes or until knife inserted near the center comes out clean. cool on a wire rack for at least 30 minutes. cover and chill within 2 hours.
