2 1/2 cups sugar
1/4 cup plus 1 tablespoon cocoa powder
Pinch kosher salt
10 ounces unsalted butter, room temperature


  1. Make your dough, flatten, and cut it into small pieces
  2. Place the sugar, cocoa powder, salt, and butter into a large zip-top bag and squish to combine. Cut a whole in 1 corner of the bag.
  3. For each pie, pipe 1 to 2 tablespoons of mixture onto the center of the dough. 
  4. Preheat your oven to 350F
  5. Brush the edges with Egg Wash to help hold it together
  6. Fold the dough over the filling and pinch the edges together, press the edges with a fork to make sure it sticks
  7. Place on a pan and bake for 20 minutes
  8. Let cool on a cooing rack
  9. Enjoy
