Hearty, filling and delicious potato soup that will become a new comfort food.

ingredients

10 slices of cooked and crumbled bacon (do not use "real" bacon bits, cook your own)

1 bunch of green onion chopped

1 large container of chicken stock

2 pkgs of country gravy mix

1 pkg diced ham

6-8 medium sized potatoes (yukon gold or red)

directions

wash and dice potatoes and put in crock pot, add whole container of chicken stock.

Let cook on high for about 4 hours.

Add gravy mix, onion, bacon and ham and stir until gravy is dissolved. Depending on desired consistency you may want to add some water or milk at this point.

Continue to cook on low for another 4 hours or until potatoes are fork tender.

Top with Swiss or mozzarella cheese.

Please note, this can be cooked on high the whole time but it needs to be stirred more frequently. This pic is of soup that I made and then froze, it is still delish but much more visually appealing before freezing. I have shared this recipe with many and they have loved it.
