Yummy, filling comfort food. Tastes much better than it looks

ingredients

1-2 eggs
4-5 corn tortillas (white or yellow)
butter, salt
red sauce (taco, tapatio, tobasco)
1/2 tomato and or 1/2 avacado , chopped
sour cream
A pan & at least a Hot Plate.

directions

Fun for breakfast, lunch or dinner with friends or not.
Stack 4-5 round corn tortillas, fold in half & cut to make strips.
melt pad of butter or margarine in hot pan, throw in strips. WHile these cook, chop tomato and avacado. Flip strips if you can(!)
Add more butter if needed.
Reduce heat, push tortillas into corner & crack 1-2 eggs on tortillas. If needed, jiggle pan to keep from sticking/burning.
Flip over and add tomato, avacado & some red sauce (salt optional). Fold over to make omelete style or not.
Slide onto plate, top with 1-2 spoons of sour cream and red sauce.
Great with Beerw/lime if your over 21.
