Great for BRUNCH!
ingredients
- 1/2 ripe avocado
- 1 tbsp lemon juice
- 1 medium-soft taco size tortilla
- 1 Large egg
- cooking spray
- Garlic Powder (to taste)
- Salt and Pepper (to taste)
- Red Pepper Flakes (to taste)
- Ground Cumin (to taste)
directions
- Cut your avocado in half and mash it
- Add 1 tbsp fresh lemon juice and the seasonings to your liking and give it a stir.
- Now take your tortilla….and toast it. I used my panini press because I knew it would get it nice and crispy, but you could pop them on the rack in the oven, or heat it until crispy in a skillet.
- Now spread that yummy avocado mixture on top
- Cook your egg to your liking…poached, fried, hard-boiled & crumbled, etc. I cooked mine in a small skillet with a little cooking spray.
- Plop that yummy, warm egg right in the middle of your avocado & ENJOY!!
