Cucumber-Wrapped Tuna Tartare

A delectable, easy appetizer for use

ingredients

1lb sushi-grade tuna - Get it as fresh as humanly possible. Even better? Catch and filet the tuna yourself. Clean it appropriately, though—none of us want any food-borne diseases from your ineptitude.

1 avocado (Hass preferably—I find they have more flavor than the California variety)

4 thin slices of cucumber—make sure they’re thin enough to be wrapped in a circle around the tuna/avocado mixture

1-2tsp. olive oil (extra virgin, if you have it. It does wonders for raw flavor)

Wasabi oil, for garnish

Whole chives, for garnish

directions


1. Cube tuna into around 3/4in. to 1in. cubes.

2. Remove avocado from skin, cube accordingly into 3/4in to 1in. cubes (be sure to remove the pit!)

3. Toss tuna and avocado cubes lightly together in a bowl with a pinch of salt and a teaspoon of olive oil.

4. Take long cucumber slices and twist into a circular ramekin-like shape in the middle of the plate.

5. Delicately spoon tuna and avocado mixture into the cucumber-slice ramekins.

6. Drizzle wasabi oil over entire dish.

7. Take a few sprigs of chive and push them gently into the top of the tuna-avocado mixture, so it sticks up out of the top.
