The BLT without the bread, quick & cool for summer

ingredients

1 lb bacon
12 Roma tomatoes
1 bunch green onions, chopped
1 c parmesan cheese, freshly grated
1/3 c miracle whip or mayonnaise
leaf lettuce
party toothpicks

directions

1. Fry the bacon & crumble
2. Cut tomatoes in half lengthwise, scoop out the insides and place cutside down on papertowels to drain.
3. Combine bacon, green onions, parmesan cheese, and mayonnaise.
4. Fill tomato halfs with a scoop of bacon mixture each.
5. Wrap each in a piece of lettuce, securing with a toothpick.
