Mock Gnocchi Soup

Low(er)-carb take on a restaurant favorite

ingredients

6 turkey meatballs, baked according to package and chopped (6g)
3/4 c. Mushroom Alfredo pasta sauce (9g)
1 turkey breast or large chicken breast, baked and shredded (0g)
32 oz. turkey or chicken broth (0g)
1/2 c. heavy cream (0g)
2 T. butter (0g)
1 T. olive oil or turkey sausage drippings (0g)
1 c. chopped celery (4g)
Dried minced garlic and minced onion, to taste (0g)
1/4 t. thyme (0g)
1/4 t. parsley (0g)
Salt and pepper, to taste (0g)

directions

1) Saute celery, onion, and garlic in butter and oil over medium heat until tender and celery is translucent, about 5 minutes.
2) Add broth, cooked turkey (or chicken), cooked meatball pieces, and seasonings, and stir until simmering, about 5-10 minutes. (I chop the meatball into cashew-sized pieces, in order to mimic gnocchi.)
3) Reduce heat slightly and add in the Alfredo sauce and cream. Warm through and serve.
