Cheesy Shrimp and Grits

Good for breakfast but just as good for dinner on a cold night with some buttered toast or homemade biscuits and coffee.

ingredients

  • 1 pound medium size fully cooked frozen shrimp, thawed and peeled
  • Creole seasoning, to taste (such as Tony Chachere's)
  • 1 - 2 tablespoons butter
  • Quick-cooking grits
  • Chicken broth or light cream (optional)
  • Salt, to taste
  • 1 to 1 1/2 cups shredded cheddar cheese
  • 2 oz cooked and crumbled bacon (or packaged "real" bacon pieces)
  • Chopped green onions

directions

  • Rinse the shrimp and blot dry with paper towels.
  • Place shrimp in a mixing bowl; season with creole seasoning and set aside.
  • In a saucepan, prepare desired amount of grits as directed on package, (substituting HALF the amount of water called for with chicken broth or cream, if desired).
  • When grits are done, stir in the butter, salt, and cheese until melted.
  • Remove from heat and keep covered until ready to serve.
  • Heat a medium skillet over medium-high heat;
  • add the butter, stirring to melt. 
  • Add the shrimp and saute until the liquid has cooked out and shrimp are lightly seared. 
  • To serve, spoon the grits on plates or shallow bowls and top with sauteed shrimp, green onions and crumbled bacon.
  • Serve immediately.
