Good for breakfast but just as good for dinner on a cold night with some buttered toast or homemade biscuits and coffee.
ingredients
- 1 pound medium size fully cooked frozen shrimp, thawed and peeled
- Creole seasoning, to taste (such as Tony Chachere's)
- 1 - 2 tablespoons butter
- Quick-cooking grits
- Chicken broth or light cream (optional)
- Salt, to taste
- 1 to 1 1/2 cups shredded cheddar cheese
- 2 oz cooked and crumbled bacon (or packaged "real" bacon pieces)
- Chopped green onions
directions
- Rinse the shrimp and blot dry with paper towels.
- Place shrimp in a mixing bowl; season with creole seasoning and set aside.
- In a saucepan, prepare desired amount of grits as directed on package, (substituting HALF the amount of water called for with chicken broth or cream, if desired).
- When grits are done, stir in the butter, salt, and cheese until melted.
- Remove from heat and keep covered until ready to serve.
- Heat a medium skillet over medium-high heat;
- add the butter, stirring to melt.
- Add the shrimp and saute until the liquid has cooked out and shrimp are lightly seared.
- To serve, spoon the grits on plates or shallow bowls and top with sauteed shrimp, green onions and crumbled bacon.
- Serve immediately.
