ingredients

  • Butter: 1 tsp + 3 tbsp
  • Egg: 1
  • Milk: 1/4 cup
  • Ham: 3 slices, roughly chopped
  • Country or soft white bread: 4 slices
  • Egg (or plain) mayonnaise: 4 tbsp
  • White sharp cheddar: 2 slices
  • Sea salt: to taste

directions

  1. Heat 1 tsp butter in saucepan over low heat.
  2. Add eggs and milk and quickly whisk mixture together.
  3. Lift pan off heat. Add ham. Return pan to low heat.
  4. Stir mixture for another 15 seconds. Remove mixture from heat. Set aside.
  5. Heat another 1 tbsp butter in pan.
  6. Place 4 slices of bread onto pan. Cook till evenly browned (about 4 min).
  7. Remove bread onto a plate, cooked sides facing up.
  8. Spread 1 tbsp mayonnaise onto the cooked sides of each bread.
  9. Place 2 tbsp egg & ham mixture onto mayonnaise of 2 slices of bread.
  10. Top with 1 slice of cheese each and then place the remaining slices of bread on top of cheese slices, mayonnaise side down.
  11. Heat remaining 2 tbsp butter in pan. Place the 2 sandwiches onto pan and cook till evenly browned (about 4 min).
  12. Flip sandwiches to the other side. Cook for another 4min till browned and the cheese has melted.
  13. Sprinkle some sea salt sparingly over sandwiches. Serve warm.
