Delicious cheesey scalloped potatoes to go with any entree
ingredients
3 potatoes, thinly sliced
1 tbsp water
1.5 cups half-and-half
1 cup shredded mild cheddar cheese
1/2 tsp kosher salt
1/2 tsp minced garlic
1/2 tsp Dijon mustard
1/4 tsp pepper
1/4 cup shaved Parmesan cheese
directions
1. Preheat oven to 325 F. Coat 2 quart shallow baking dish with cooking spray. Peel and slice potatoes thinly.
2. Place potatoes in microwave-safe bowl with water and cover. Microwave on high 7-10 minutes or until tender when pierced with a fork,
3. Place half-and-half in medium saucepan. Heat on medium 5-7 minutes. Whisk in cheese, salt, garlic, mustard, and pepper. Cook and stir 3-4 minutes or until cheese melts.
4. Remove from heat. Stir potatoes into cheese sauce. Pour mixture into baking dish and top with Parmesean cheese.
5. Bake 20-25 minutes or until cheese melts and sauce bubbles around edge.
