ingredients

Potatoes
Butter

Optional:
Bacon
Cheese
Parsley
Garlic

directions

Just mash potatoes plain with butter or you can add yummy ingredients like cooked bacon, cheese, parsley, green onion, garlic, etc. Stuff in to a greased muffin tin, run a fork along the top and brush with melted butter or olive oil. Bake at 375 degrees or until tops are crispy and golden.

Use different size muffin pans for different portion sizes. Lower fat than chips, wedges, etc...

I really think the time on this is underestimated. 15 mins? More like 45.

Really a novel idea. especially since husband could live off meat and taters LOL Do you think it would work with instant already made up? Seems but hate disasters :)

How many potatoes are needed?

This seems like an incredible way to make twice-baked potatoes without having to deal with the skins that rip or are too thick/too thin, etc.

mine fell apart when i went to transfer them from pan to plate, but my husband thought they tasted great! i used three small potatoes.
