ingredients

  • 6 russet potatoes, sliced into 1/4" slices
  • salt and pepper
  • 2 1/4 Cups of mixed Shredded Cheese
    • 1 cup Cheddar Cheese
    • 1 cup Monterey Jack Cheese
    • 1/4 cup Cheddar Cheese (for toppings)
  • 8 slices bacon, cooked and crumbled
  • 2 cups milk
  • 2 large eggs

directions

  1. Heat Oven to 375
  2. Mix Milk and Eggs in a bowl, set aside
  3. Layer half of the Potato slices into a buttered casserole dish, salt and pepper
  4. Top with the Cheese, Bacon, and the OTHER half of the Potatoes.
  5. Pour Egg Mixture over the top
  6. Cover with foil and bake for 90 minutes.
  7. Let cool for 15 minutes before serving
