ingredients
- 6 russet potatoes, sliced into 1/4" slices
- salt and pepper
- 2 1/4 Cups of mixed Shredded Cheese
- 1 cup Cheddar Cheese
- 1 cup Monterey Jack Cheese
- 1/4 cup Cheddar Cheese (for toppings)
- 8 slices bacon, cooked and crumbled
- 2 cups milk
- 2 large eggs
directions
- Heat Oven to 375
- Mix Milk and Eggs in a bowl, set aside
- Layer half of the Potato slices into a buttered casserole dish, salt and pepper
- Top with the Cheese, Bacon, and the OTHER half of the Potatoes.
- Pour Egg Mixture over the top
- Cover with foil and bake for 90 minutes.
- Let cool for 15 minutes before serving
