Bean Salad

description

A very tasty and healthy salad that lasts a long time in the fridge, is cheap to make and great to bring to parties!

ingredients

3 Cans of various mixed beans, or whatever you prefer
2 stalks of celery
2-3 green onions (optional)
1/2 red pepper (optional)
1-2 large carrots

1/4 cup red wine vinager
1/2 cup olive oil
1 tbls of cumin
2 tbls of garlic powder
tbls of chili pepper

directions

Drain and rinse the 3 cans of beans (2 6-bean-blend and 1 can of black-bean works the best) - put in large bowl
finely dice celery (about 2 stalks), approx 2-3 green onions 1/2 a red pepper and 1-2 large carrots

Make the dressing seperately and then pour over top:
1/4 cup red wine vinager
1/2 cup olive oil
1 tbls of cumin
2 tbls of garlic powder
tbls of chili pepper

** taste it once its mixed and add more garlic/cumin if you want and/or salt and pepper (salt changes the taste quite a bit (for the better)
