Two crusts with cheese in between and a whole lotta toppings!

ingredients

Dough:

  • 3 3/4 cups bread flour
  • 2 teaspoons sea salt
  • 1/4 teaspoon active dry yeast
  • 1 1/2 cups water

Sauce:

  • 1 can(28 oz) whole peeled tomatoes(preferably San Marzano)
  • 1 can (8 oz) tomato paste
  • 1 small sweet onion (half a medium or a quarter of a large)
  • 3 cloves garlic
  • 1/4 cup grated Parmesan
  • spices to preference(I use a combination of basil, oregano, fennel seed, garlic powder, chili powder, cinnamon, tarragon, thyme, red pepper flakes, rosemary, salt, pepper)

Toppings:

  • mozzarella
  • Parmesan
  • 2 stalks green onions
  • 1 medium bell pepper
  • 1 jalapeno
  • 4 oz mushrooms
  • 1 medium sweet onion
  • 1/2 lb hot Italian sausage
  • 1/2 lb chicken
  • 1/2 lb ground beef
  • fresh mozzarella

directions

  • Preheat oven to 500F and leave a pizza stone in for 30-60 minutes

Dough:

  • mix dry ingredients add water until tacky
  • form into a ball and let rest in a covered bowl for 18+ hours
  • divide into balls a little over half a pound each
  • roll out two into crusts
  • spread cheese on one crust and lay the other crust on top
  • crimp the edges and flatten

Sauce:

  • heat up butter and oil in a saucepan
  • chop up onion and cook until it begins to caramelize
  • add some brown sugar and salt
  • add garlic and cook until aromatic
  • add whole peeled tomatoes and paste
  • add in spices and Parmesan,
  • mix well,
  • cook for about half an hour
  • use a potato masher or whisk to crush the tomatoes
  • reduce until desired thickness

Toppings:

  • cook the Italian sausage
  • cut the chicken into bite sized pieces and cook in the sausage grease
  • cook the ground beef
  • chop up and stir fry onion, jalapeno, bell pepper, and mushrooms in the grease with a little butter

Pizza:

  • lay down sauce
  • add cheeses
  • add toppings
  • top with fresh mozzarella
  • cook until the crust is crispy and and the mozzarella starts to brown(10-15 minutes)
