Chipolte Chicken Pizza with Fresh Corn Salsa
ingredients
- 1 can (7 ounce) chipotle peppers in adobo sauce
- 2 chicken breasts
- 1 cup corn (fresh off the cob or frozen)
- 1 pre made pizza crust
- 1 1/2 cups shredded mozzarella
- 1 red onion
- 1 can (8 oz) pizza sauce
- cilantro (to taste)
- lime (to taste)
- salt and pepper (to taste)
directions
- Dice up chicken breasts and mix with chipotle peppers and adobo sauce and marinade for at least 30 minutes.
- In a mixing bowl combine corn (fresh off the cob or frozen), cilantro, diced red onions and chipotle peppers
- Roll out pre made pizza dough on to a pizza pan.
- Spread sauce on the pizza
- Top with shredded mozzarella and marinated chicken and cook for 7 minutes in a pre heated 350 degree oven
- Add corn salsa and cook for an additional 8 minutes or cheese is melted let sit out for 3 minutes
- Serve and eat
