ingredients
- 1 lb Italian Sausage (or cooked chicken)
- 1 Onion, chopped
- 1 cup Mozzarella, shredded
- 1/2 cup Parmesan (optional)
- 1 box Jumbo Pasta Shells, Cooked according to the package
- 2 cans of Spaghetti Sauce (HERE's a spicy homemade recipe if you need one)
- 2 cloves Garlic, minced
- 1 bag of Spinach
- 2 lbs Ricotta Cheese (cottage cheese works too)
directions
- Brown the Sausage with Onion and Garlic, drain
- Cook the Spinach in 1 cup of water until soft and wilted
- Drain and squeeze out the water, then chop the spinach
- Mix the Sausage, Spinach, Ricotta, 1/2 Mozzarella and Parmesan Cheese together
- Fill each large pasta shell with the mixture
- Spread half of spaghetti sauce into prepared baking dishes. Arrange shells over sauce; top with remaining sauce. Cover tightly with heavy-duty aluminum foil. If you are freezing one of the 9x13 prepared pans, freeze it after this step. Include a baggy of the remaining mozzarella for when you cook it.
- Bake, Covered, for 40 minutes at 350.
- Uncover, sprinkle the rest of the cheese on top and bake for another 5-10 minutes until the cheese is melted.
