ingredients
- 4 medium-sized peppers (poblano recommended)
- Olive oil
- 1 box mac and cheese, prepared according to directions
- Shredded cheese
directions
- Preheat broiler to 450 degrees.
- Lightly brush peppers with olive oil.
- Roast on baking sheet for ten minutes or until skin begins to char and blister, turning several times.
- Remove peppers from oven and immediately seal in ziploc or place in bowl covered with plastic wrap.
- Leave to steam for ten minutes, then remove charred skin.
- Switch oven to bake at 350 degrees.
- Cut peppers in half and stuff with macaroni.
- Cover with shredded cheese and return to oven for five minutes or until fully melted.
