Simple Mexican Casserole

It's actually pretty healthy too!

ingredients

  • 2 red bell peppers
  • 2 green bell peppers
  • 1 jalapeno or 2 chipotle peppers (optional - just for more kick)
  • 1/2 red onion
  • 2 cups frozen corn
  • 2 teaspoons chili powder
  • 2 teaspoon cumin
  • salt to taste 
  • 2 cups Mexican cheese
  • 18-20 corn tortillas
  • 1 can refried beans
  • 2 cups red enchilada sauce
  • cilantro, guacamole, or sour cream for topping

directions

  1. Slice up all your Vegetables
  2. In the skillet, over High Heat, add the Onions and Peppers.  Sprinkle with Chili Powder and Cumin, and stir until browned.  Set aside
  3. Do the exact same thing in step 2 with the Corn, set aside
  4. Preheat your oven to 400 degrees and cut your Tortillas into strips
  5. Spread a little of the Enchilada sauce into the bottom of a Greased baking Pan
  6. Layer (in this order): 1/2 the Tortilla Strips, ALL of the Re-fried Beans, 1/2 the Veggies, 1/2 the Enchilada Sauce, 1/2 the Cheese, then cover with the other half of the Tortillas, Veggies, Sauce and Cheese
  7. Cover with foil and bake for 15-20 minutes until the cheese has melted.
  8. Top with Sour Cream, Guacamole, etc... :)
