Black Bean Casserole

Black beans, cheese, tortillas and salsa baked delicousness!

ingredients

2 cans black beans (drained)
1 can diced tomatoes
1 onion (diced)
1 tsp cumin (more to taste)
1 tsp garlic powder (or more to taste)
3/4 cup pace picante salsa
2-3 tortillas (ripped to shreds) ((fun for a kid to help with))
2 c mexican blend cheese (shredded)
9x13 baking dish

directions

Preheat oven 350.
Saute onions in large skillit. Add black beans, tomatoes, seasonings and salsa... Bring to a light boil, stirring frequently. Remove from heat once you see bubbles.
Layer sauce, some tortillas, cheese, sauce, tortillas, cheese.

Discard most of the liquid from the sauce in the skillit. If you find there is a lot of "juice" in your casserole, add more tortilla on top of the sauce.

Put in the oven for 20-25 min.
