Tequila Shrimp

Tequila + Shrimp...what more is there to say? This is great on top of rice, or serve with flour tortillas and beans of choice for a great Mexican dish.

ingredients

1 T. extra vrgin olive oil
1 lb medium peeled and deveined shrimp
1/4 c. chopped onion
1 larg tomato, chopped
2 T. chopped cilantro
1 oz. tequila
1/2 t. chili powder
1 t. salt
1/2 t. fresh ground black pepper

directions

1. Heat olive oil in a large skillet over medium-high heat.
2. Add the shrimp and saute until pink
3. Add the onions, tomatoes, and cilantro
4. Cook for about 2 minutes, then add tequila, chili power, salt and pepper.
5. Cook for about 1 to 2 minutes more to let it absorb the flavors.

Serving suggestions:
Over hot rice, or with flour tortillas
