This is a quick and simple version of a classic!
ingredients
4 boneless, skinless chicken breasts, chopped into 1/2 cubes
2 tablespoons olive oil
1 can fat free cream of chicken soup
1 can reduced sodium chicken broth
frozen mixed veggies
1 can biscuits, quartered
Salt and pepper, to taste
directions
Heat olive oil in non-stick skillet. Add chopped chicken and cook until done. Remove chicken to a plate, set aside. Put soup and broth in a large pot and heat through. Add chicken and veggies. Heat through, making sure veggies are hot. Put quartered biscuits into veggie/soup mixture. They will float. Cover and cook on medium heat until biscuits are no longer gooey. Add salt and pepper to taste. Serve hot.
