Homemade Alfredo Sauce

Delectable and easy alfredo sauce from scratch!

ingredients

3 T. butter or margarine
3 T. flour
2 c. milk (I use 1%, can use whole or 2%)
1 6oz. bag shredded parmesan cheese
1/2 c. parmesan cheese (from container - i.e. Kraft)
2 T. garlic (powder or fresh, to your taste)
salt & pepper (to your taste)
1 t. cayenne or cajun seasoning (I prefer a spice, but for traditional alfredo, you can omit this).

Over medium heat, saute butter and flour to create a roux. You want a medium to medium blonde roux (basically, cook until it's a light gold). Next, slowly whisk in the milk until combined. Make sure to lightly simmer as to cook off the flour taste. When thicker (coating back of spoon), stir in grated parmesan as well as powdered. Stir to combine. Add garlic, pepper, and salt to your taste/preferences. At this point you can either add a touch more flour for a thicker sauce or milk for a thinner - it's all about how thick you like your alfredo sauce. Pour over your favorite pasta and enjoy!
