ingredients
whole roaster chicken
celery
onion
olive or vegetable oil
salt
pepper
poultry seasoning
directions
Preheat oven to 350 degree Fahrenheit
Chop 2-3 stalks of celery
Chop 1 medium yellow onion
Remove innards and neck from chicken thawed in the refrigerator and wash with water
Pat dry chicken inside and out and place in roaster or baking dish
Sprinkle salt onto your hand and rub the interior of the chicken generously with the salt
Stuff the interior of the chicken with chopped celery, onion and a little pepper
Tie the legs together with butcher string and turn back and tuck the wings under the bird
Rub a LITTLE olive or vegetable oil over the breast of the bird
Sprinkle poultry seasoning all over the skin of the bird
Place in oven and BAKE uncovered until internal temperature reaches 165 degrees Fahrenheit -- estimate 20-25 minutes per pound checking often.
If chicken becomes too brown, tent with foil or cover
Remove celery and onion mix and string before carving and serving
Drippings can be made into gravy by placing with equal parts milk and drippings. Slowly add 1 tablespoon of cornstarch and stir while thickening
